Herb Vinaigrette


  • 1 clove garlic minced
  • 1/3 cup freshly squeezed lemon juice
  • 1 teaspoon Dijon mustard (optional)
  • 1 shallot minced
  • 1/3 cup of parsley, finely chopped
  • 1 cup olive oil

This recipe is refreshing and delicious when served with garden-fresh vegetables. And so healthy!

Makes: about 1 1/2 cups

  1. Combine all ingredients except the olive oil.
  2. Slowly whisk in the olive oil
