Fudgy Mint Brownies: Fresh, Fabulous and Allergy-Friendly

Bursting with an irresistible combination of refreshing mint and rich chocolate fudge, Mint Brownies are a fresh twist on a classic. Free from the top 9 allergens and gluten, these Mint Brownies are sure to be a fan favorite for followers of my Kitchen Craft Series for Allergic Living. 

By using a premade brownie mix, even the busiest of bakers will be able to prepare this delicious dessert. The mix I chose to use is Bake Me Healthy’s Dark Chocolate Fudgy Brownie mix. I’ve been impressed by the brand’s dedication to providing allergy-friendly and gluten-free mixes without compromising on taste. 

However, feel free to choose any premade brownie mix or homemade brownie recipe, based on your dietary needs and preferences. (Bake Me Healthy’s mix weighs 14.4 ounces. If you use a slightly bigger mix by volume, you’ll just end up with a few extra unfrosted brownies.)

In this recipe, I make use of a stand mixer. However, if you don’t have a stand mixer, a large bowl with an electric mixer will work just as well. 

For the frosting, I personally like to add a drop of green gel food coloring to give it a vibrant green hue. But this is optional rather than necessary, especially for those who avoid dyes.

Fudgy Mint Brownies

Makes: 9 large brownies
Free of: top allergens and gluten

Ingredients for Mint Brownies

Brownies

Mint Frosting

  • 1/2 cup dairy-free, soy-free margarine (room temperature)
  • 2 tbsp dairy-free milk beverage (e.g. rice milk)
  • 2 cups confectioners’ sugar
  • 1 tsp peppermint extract
  • 1 drop green gel food coloring (e.g. Americolor)

Chocolate Drizzle Topping

  • 1/2 cup allergy-friendly semi-sweet chocolate chips (e.g. Enjoy Life)
  • 4 tbsp dairy-free, soy-free margarine (room temperature)

Tools

  • 8×8-inch square brownie pan
  • Stand mixer with mixing bowl 
  • Flat beater attachment
  • Piping bag
  • Open star tip
  • Silicone melting pot or small microwavable bowl
  • Drizzle squeeze bottle 
  • Optional: parchment paper

Instructions for Mint Brownies

  1. Prepare brownie mix according to the instructions on the package. To prevent sticking, grease or line the bottom and edges of a non-stick brownie pan with parchment paper.
  2. Once the brownies have finished baking, set aside to cool completely.
  3. Begin preparing the mint frosting. On low speed, whip softened dairy-free margarine in the stand mixer’s bowl for 2-3 minutes, or until it is soft and smooth. Mix in dairy-free milk beverage, followed by confectioners’ sugar. 
  4. Once frosting is created, slowly add peppermint extract. Remember: A little bit goes a long way. Taste and adjust the amount based on your preferences. 
  5. If adding food coloring, mix in a drop of green gel coloring.
  6. Fill a piping bag with frosting, then pipe thick rows of frosting across cooled brownies in pan. 
  7. Set the pan of frosted Mint Brownies in the refrigerator for an hour to chill. 

Topping the Brownies

  1. Prepare chocolate topping by slowly melting dairy-free margarine and chocolate chips in a silicone melting pot or microwavable safe bowl. Microwave for 30 seconds. Stir. Continue microwaving in 15 second increments, stirring in between each, for an estimated total heat time of 2 minutes. 
  2. Carefully pour chocolate into your drizzle squeeze bottle, and twist on its top. Tip: Be careful not to squeeze a plastic drizzle bottle too hard when drizzling. Too much pressure could cause the top to pop off.
  3. Remove chilled brownies from the fridge. Using a diagonal back-and-forth motion, quickly drizzle chocolate topping across the Mint Brownies. 
  4. Chill the brownies in the refrigerator for an hour or until the chocolate drizzle has set. 
  5. Cut into 9 squares. Serve and enjoy! Store any leftover brownies in an airtight container, in the refrigerator, for up to 3 days.
