Talking Allergies

Hi there,
My son will be turning a year old at the end of April, and I would like to bake him a cake. I'm just not sure about what I can make, so would appreciate any and all suggestions! Frosting ideas would be great, too. Thanks in advance.

You'll want to find a margarine that is soy and milk free. You might try a vegetable shortening in place of margarine for your cake and icing recipes.

I haven't yet found this... any suggestions? I'm in Calgary, so we have a couple really good health food stores. Haven't checked one of them, but the other doesn't have any such product.

Here is our favourite chocolate cake recipe. It is fool proof and delicious.

Recipe: Grandma's eggless, butterless, milkless cake:

3 cups all-purpose flour
2 cups white sugar
6 tablespoons unsweetened cocoa powder
2 teaspoons baking soda
2 teaspoons baking powder
Dash of salt

2/3 cup vegetable oil
2 cups water
2 tablespoons white vinegar
2 teaspoons vanilla extract

Directions:
1. Combine dry ingredients in bowl
2, Combine wet ingredients in another bowl
3. Pour liquid ingredients all at once into dry and beat until smooth
4. Pour batter into greased 9x13 pan
5. Bake in 350 oven for approx. 40 min (this can vary slightly...check to see baked through)

You can often use Crisco Golden shortening in place of butter of margarine.

I just came across this recipe for a milk and egg-free chocolate cake at: http://www.recipezaar.com/12564 (this is a really good recipe site). If you scroll down from the recipe, people review the recipe and provide alternatives - there are some good ideas posted.

I know the birthday is well past but I came across this recipe too. I haven't tried it yet so I have no idea how it turns out. (Edited to add that I have tried it now - we didn't like it. Very heavy cake)
Silver White Cake
1 1/2c sugar
2 3/4c flour
1 1/2 tsp baking powder
2 tsp baking soda
2TBSP white vinegar
1/2c vegetable oil
2tsp vanilla extract
1tsp almond extract (optional)
2c cold water

Preheat oven to 375'. MIx dry ingredients in large bowl. Make 3 wells and add wet ingredients. Mix well with wooden spoon. Pour batter into lightly greased 9x13 pan. Bake 30-40m.

I've been meaning to post this for awhile. It is a family staple and really delicious.

Grandpa's Golf Cake
(chocolate cake - free of dairy, egg, peanut, nut, soy)

1.5 cups all-purpose flour
1 cup white sugar
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
3 Tbsp safe cocoa (or same amount of melted chocolate chips )
1 Tbsp vinegar
1 tsp vanilla
1/3 cup vegetable oil
1 1/4 cup hot water

1. Pre-heat oven to 350º F.
2. Measure flour into an 8" x 8" baking pan. (Or, if making cupcakes, measure into large bowl.)
3. Mix in remaining dry ingredients (sugar, baking powder, baking soda, cocoa – sift first if possible, salt).
4. Make 3 holes (about the size of a golf ball) in the flour mixture.
5. In hole #1 put the vinegar. In hole #2 put the vanilla. In hole #3 put the oil.
6. Pour in the hot water.
7. Mix very well with a fork. Add more water if dough seems stiff (I never have).
8. Bake 25 minutes or perhaps more. (Regular size cupcakes: 17 minutes)

Freezes well. Frost with cocoa frosting (below) and cover with safe sprinkles (McCormick’s are safe), candies, or even Froot Loops!

Allergy Wise Cocoa Frosting

1/2 cup margarine , softened
1/2 cup unsweetened cocoa powder
2 2/3 cups unsifted confectioners sugar (icing sugar)
1/4 cup water
1 tsp. vanilla extract

Beat margarine on medium speed in large mixer bowl until softened, about 1 minute. Add remaining ingredients. Beat on low speed until ingredients are moistened. Beat on medium speed until creamy.

Keeps for a long time in the fridge, and is truly delicious.

I think a marble cake would work very well. If your son has other siblings, get them to participate in decorating the cake. It will make it all the more special.
